Amicon Construction Building First Rubio’s Restaurant on the East Coast

Miami — Amicon Construction Management (ACM) is managing the construction of three Rubio’s Coastal Grill locations in South Florida. San Diego-based Rubio’s has more than 200 locations in the southwestern U.S. Rubio’s first South Florida location — also its first on the East Coast — will be located in downtown Miami and is expected to be completed this fall.

In addition to Rubio’s, Amicon Construction Management also recently completed the second Spring Chicken location, a fast-casual restaurant concept created by 50 Eggs Inc. in Ft. Lauderdale. Construction of the first location in Coral Gables, Fla., was also managed by ACM.

For companies like Rubio’s and Spring Chicken, Amicon Construction Management acts as the owner’s representative, managing all aspects of construction. Amicon utilized its innovative systems, proven practices and expert personnel to efficiently manage the project from concept to completion including all aspects of the build-out, consequently reducing construction time and saving costs.
