New York City — Rosa Mexicano, a pioneering brand in elevated Mexican dining, has appointed Richard Zoob as chief executive officer. Zoob’s appointment marks a full-circle return to Rosa Mexicano, where he previously served as both a consultant and board advisor. Having worked closely with the brand over the years, he brings a nuanced understanding of its legacy, its operational opportunities and its untapped potential in today’s evolving dining landscape.

A seasoned hospitality executive and entrepreneur, Zoob has held leadership roles across major national brands and independent concepts alike, including serving as CEO of The Granola Bar. He is also the co-founder of Right Coast Taqueria, a chef-driven concept rooted in scratch cooking and regional Mexican and Central American flavors. His earlier experience includes senior operational leadership roles at Chili’s and Outback Steakhouse.

Zoob will prioritize operational stability and long-term sustainability, with a focus on strengthening unit-level performance, enhancing value perception for guests and building a more disciplined approach to growth. This includes exploring new formats and channels, from smaller footprint locations to non-traditional venues such as airports and casinos, alongside potential licensing and fast-casual extensions of the brand.

In the near term, Rosa Mexicano will continue to invest in menu innovation, bar program development and service enhancements, while preparing for the opening of its highly anticipated Broadway location in New York City later this summer.
Founded in New York City in 1984, Rosa Mexicano set a new standard for Mexican cuisine in the U.S., introducing fine-dining Mexican and tableside-made guacamole, and later creating the now-iconic frozen pomegranate margarita. Today Rosa has nine locations across the country.
