Sage Hospitality Group Welcomes Mercantile Dining & Provision to Portfolio

Denver — In late August, Sage Hospitality Group welcomed Mercantile Dining & Provision to its portfolio. Located in Denver’s Union Station, the award-winning restaurant by James Beard Award Winner Chef Alex Seidel is joining a roster of more than 50 restaurants, bars and entertainment venues under Sage Restaurant Concepts (SRC). Mercantile will be an owned restaurant concept for Sage, alongside brands such as Urban Farmer and Departure, with plans to strategically grow the brand in suitable standalone restaurant locations. Additionally, Chef Seidel will be joining SRC as a collaborator, leveraging his extensive experience to build and support new restaurant concepts beyond Mercantile.

The team at Sage Restaurant Concepts will be overseeing operations and management of the space. Led by new COO Justin Fowler, the SRC team will work closely with Chef Seidel to ensure operational excellence. 

Mercantile opened in 2014 and quickly became a favorite among diners for its seasonal American cuisine highlighting local producers and purveyors. As the restaurant heads into its 10th year, SRC will oversee a thoughtful renovation, with plans to unveil a refreshed space in spring 2025. Located just steps from sister Sage restaurants and cocktail bars including Urban Farmer, Call Me Pearl, Kachina Cantina and The Original, Mercantile has consistently been popular with guests of The Crawford Hotel, Sage’s award-winning hotel, also located within Union Station. It also has a very popular outpost in Denver International Airport’s Terminal A.

Chef Seidel and his team, currently led by Executive Chef Alex Grenier, have established the restaurant as one of the best in Denver, with elevated service and creative dishes that change with the seasons.

A handsome space with wood tables, high ceilings, plush banquettes and ample natural lighting, Mercantile is a lively destination for lunch and dinner.  With room for 108 guests across the dining room, chef’s counter bar and marketplace, the restaurant is also home to a semi-private wine room that can host events and celebrations. Mercantile is also home to an outdoor area with capacity for 75 guests.
